The McMenno Rib Sandwich from the Oba Yo Test Kitchen Recipe 3 lbs ground pork 1 lb varscht (farmer sausage) Our favorite is Waldner farmer sausage from Niverville Manitoba. Grind or finely chop raw varscht into small pieces Thoroughly mix chopped varscht and ground pork. Season mixture with 1 ½ tsp salt and ½ tsp pepper (or to taste) Shape into patties about 1/2" thick Grill,fry or bake until done (145 internal temp. Do not over cook!)
