The McMenno Rib Sandwich

The McMenno Rib Sandwich from the Oba Yo Test Kitchen

Recipe

3 lbs ground pork

1 lb varscht (farmer sausage) Our favorite is Waldner farmer sausage from Niverville Manitoba.

Grind or finely chop raw varscht into small pieces

Thoroughly mix chopped varscht and ground pork.

Season mixture with 1 ½ tsp salt and ½ tsp pepper (or to taste) Shape into patties about 1/2" thick

Grill,fry or bake until done (145 internal temp. Do not over cook!)

Mix 1 cup of your favorite BBQ sauce (I like regular Montreal steak sauce) with 2-3 tbsp rhubarb jam, and heat in sauce pan.

Dip each of the grilled patties into BBQ mixture, (remove excess sauce from patties). Broil patties on high heat until sauce mixture bubbles on patties. Usually 2-3 min)

Place each patty on a sliced tweibach.

Top with sliced bread and butter pickles and chopped white sweet onions.
