The Ultimate Menno Summer Treat! Rebus & Roll Kuchen

 Nothing says a Menno Summer quite like rebuse and roll kuchen! I remember mom and dad picking up a nice 30 pounder from Penner Foods. We didn’t have air conditioning to cool off so we relied on cool watermelon!   And of course, with mom’s classic roll kuchen! They were big and fluffy without the slit in the center. (which is the way I prefer) Taunte Leina always insisted on cutting a slit in the center and always thought hers were better.

The cut in the center actually prevents the roll kuchen from puffy up.  The result is a more dense dough fritter.  My mom always deep fried them without the slit and they get nice and puffy with a much lighter texture. 

Here's Taunte Leina's recipe. She substituted sour cream instead of heavy cream.  Either way, they are delicious! This recipe was originally subitted to the Mennonite Treasury by Mrs. Peter Olfert in 1962.  And the exact same Mennonite Treasury is still available today!
