It's Rhubarb Season!

INGREDIENTS

BASE

1/2 Cup Cream (or milk with 2 Tbsp of butter)

1/2 Cup Sugar

1 egg beaten

1 tsp baking powder

1 tsp vanilla

1 1/3 Cups Flour (approx.)

 

3 cups sliced Rhubarb

1/2 Cup Sugar

2 tsp Cornstarch

 

CRUMBLE TOPPING

3/4 Cup Flour

1/2 Cup Sugar

1/2 Cup Butter

 

PREPARATION

 STEP 1

1) Mix together ingredients for base to form a soft dough.

2) Press dough into bottom of 9x13 baking pan to make a thin layer

3) Cut rhubarb into ¼” slices

4) Sprinkle rhubarb with sugar and cornstarch

5) Spread rhubarb in an even layer over dough

6) Mix together ingredients for crumble topping until crumbly in texture

7) Sprinkle topping over rhubarb

8) Bake at 350 for approximately 35 - 45 minutes, or until crumbs are lightly browned.
